2021Stillwater Creek Sauvignon Blanc
The 2021 Jaine Stillwater Creek Sauvignon Blanc was crafted from 100% Sauvignon Blanc grapes sourced exclusively from Stillwater Creek Vineyard in the Royal Slope AVA of the Columbia Valley in Washington State.
2021 was a warm and high-quality vintage, if only slightly low in yields. The vineyard was harvested in the early morning of September 15th, 2021. After being transported to the winery, the grapes were pressed and settled in tank for 24 hours, before undergoing primary fermentation in a combination of used and new French oak puncheons (500-600 liter).
After primary fermentation was completed, the wine spent 23 months in partially new puncheons before being bottled on July of 2023. Only 283 cases were produced.
Bright yellow with light straw in the glass. Aromas of chamomile, fennel seed and peach nectar give way to flavors of lemon zest, blood orange and white tea. The texture is beaming, with lively acidity and a chalky minerality on the palate. The delectable finish shows sweet spices with integrated texture.
